Dawet Ayu (Green Rice Flour Jelly Drink)

Ingredients

For the Green Dawet Jelly:

  • 100g rice flour
  • 50g sago flour or tapioca starch
  • 600ml water
  • 50ml pandan juice (from 5-7 pandan leaves blended with water and strained, or green food coloring)
  • 1/2 tsp salt

For the Coconut Milk Sauce:

  • 500ml thick coconut milk
  • 1/4 tsp salt
  • 1 pandan leaf, knotted (optional)

For the Palm Sugar Syrup:

  • 250g palm sugar (gula aren/gula merah)
  • 200ml water
  • 1 pandan leaf, knotted (optional)

For Serving:

  • Crushed ice

Instructions

Prepare the Green Dawet Jelly:

  1. In a large pot, combine rice flour, sago flour, salt, water, and pandan juice. Whisk until smooth and no lumps remain.
  2. Place the pot over medium heat and cook, stirring continuously, until the mixture thickens, becomes translucent, and pulls away from the sides of the pot (approximately 10-15 minutes).
  3. Prepare a large bowl filled with cold water and ice cubes.
  4. While the jelly mixture is still hot, press it through a cendol/dawet mold or a coarse colander directly into the ice water. The cold water will help the strands of jelly set.
  5. Drain the green dawet jelly and set aside.

Prepare the Coconut Milk Sauce:

  1. Combine coconut milk, salt, and knotted pandan leaf (if using) in a saucepan.
  2. Cook over low heat, stirring constantly to prevent curdling, until the mixture just starts to simmer. Do not bring to a rolling boil.
  3. Remove from heat, let cool completely, and remove the pandan leaf.

Prepare the Palm Sugar Syrup:

  1. In a separate saucepan, combine palm sugar, water, and knotted pandan leaf (if using).
  2. Cook over medium heat, stirring occasionally, until the palm sugar is completely dissolved and the syrup thickens slightly.
  3. Strain the syrup to remove any impurities and let it cool completely. Remove the pandan leaf.

Assemble and Serve:

  1. In a serving glass, place a generous amount of the prepared green dawet jelly.
  2. Add a desired amount of palm sugar syrup.
  3. Fill the glass with crushed ice.
  4. Pour in the chilled coconut milk sauce until the glass is full.
  5. Stir gently and serve immediately.
