Kue Cubit (Indonesian Half-Cooked Cake) Recipe

Ingredients

  • 2 large eggs
  • 100g granulated sugar
  • 150g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 150ml milk (or coconut milk for richer flavor)
  • 50g melted butter
  • 1 teaspoon vanilla extract
  • Toppings (e.g., chocolate sprinkles, grated cheese, chocolate chips) - optional

Instructions

  1. In a large bowl, whisk together the eggs and granulated sugar until the mixture is pale and fluffy.
  2. Sift the all-purpose flour, baking powder, and baking soda into the egg mixture. Mix gently until just combined, being careful not to overmix.
  3. Gradually add the milk, melted butter, and vanilla extract to the batter. Continue to mix until the batter is smooth and free of lumps.
  4. Heat a Kue Cubit pan (a special pan with small indentations, similar to a aebleskiver pan or mini pancake pan) over medium-low heat. Lightly grease the molds with a small amount of butter or oil.
  5. Once the pan is hot, pour the batter into each mold, filling it about halfway.
  6. Cook for about 2-3 minutes, or until the edges begin to turn golden brown and the center is still slightly runny (this is the traditional "half-cooked" style of Kue Cubit). If you prefer it fully cooked, cook for an additional minute or two until the center is set.
  7. If using toppings, sprinkle them onto the cakes while they are still cooking in the pan.
  8. Carefully remove the Kue Cubit from the pan using a small spatula or fork.
  9. Serve warm and enjoy!
