Kue Cubit (Indonesian Half-Cooked Cake) Recipe
Ingredients
- 2 large eggs
- 100g granulated sugar
- 150g all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 150ml milk (or coconut milk for richer flavor)
- 50g melted butter
- 1 teaspoon vanilla extract
- Toppings (e.g., chocolate sprinkles, grated cheese, chocolate chips) - optional
Instructions
- In a large bowl, whisk together the eggs and granulated sugar until the mixture is pale and fluffy.
- Sift the all-purpose flour, baking powder, and baking soda into the egg mixture. Mix gently until just combined, being careful not to overmix.
- Gradually add the milk, melted butter, and vanilla extract to the batter. Continue to mix until the batter is smooth and free of lumps.
- Heat a Kue Cubit pan (a special pan with small indentations, similar to a aebleskiver pan or mini pancake pan) over medium-low heat. Lightly grease the molds with a small amount of butter or oil.
- Once the pan is hot, pour the batter into each mold, filling it about halfway.
- Cook for about 2-3 minutes, or until the edges begin to turn golden brown and the center is still slightly runny (this is the traditional "half-cooked" style of Kue Cubit). If you prefer it fully cooked, cook for an additional minute or two until the center is set.
- If using toppings, sprinkle them onto the cakes while they are still cooking in the pan.
- Carefully remove the Kue Cubit from the pan using a small spatula or fork.
- Serve warm and enjoy!
