Kwetiau Goreng (Fried Flat Rice Noodles)
Ingredients
- 250g fresh flat rice noodles (kwetiau)
- 100g chicken breast or shrimp, sliced
- 100g fish balls or fish cakes, sliced (optional)
- 2 cloves garlic, minced
- 1 shallot, minced
- 2 eggs, beaten
- 1 cup bean sprouts
- 2 stalks choi sum or bok choy, chopped
- 2 tbsp sweet soy sauce (kecap manis)
- 1 tbsp light soy sauce
- 1 tsp oyster sauce
- 1/2 tsp white pepper
- 2 tbsp cooking oil
- Red chilies, sliced (optional)
- Fried shallots (for garnish)
Instructions
- Heat cooking oil in a large wok or frying pan over medium-high heat.
- Sauté minced garlic and shallot until fragrant.
- Add chicken/shrimp and fish balls/cakes (if using), stir-fry until cooked through.
- Push ingredients to one side of the wok, pour beaten eggs onto the other side and scramble until just set. Mix with other ingredients.
- Add flat rice noodles, sweet soy sauce, light soy sauce, oyster sauce, and white pepper. Toss well to combine and coat the noodles evenly.
- Add choi sum/bok choy and red chilies (if using). Continue to stir-fry for 2-3 minutes until vegetables are tender-crisp.
- Add bean sprouts and stir-fry for another minute until just wilted.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fried shallots.
