Kwetiau Goreng (Fried Flat Rice Noodles)

Ingredients

  • 250g fresh flat rice noodles (kwetiau)
  • 100g chicken breast or shrimp, sliced
  • 100g fish balls or fish cakes, sliced (optional)
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 2 eggs, beaten
  • 1 cup bean sprouts
  • 2 stalks choi sum or bok choy, chopped
  • 2 tbsp sweet soy sauce (kecap manis)
  • 1 tbsp light soy sauce
  • 1 tsp oyster sauce
  • 1/2 tsp white pepper
  • 2 tbsp cooking oil
  • Red chilies, sliced (optional)
  • Fried shallots (for garnish)

Instructions

  1. Heat cooking oil in a large wok or frying pan over medium-high heat.
  2. Sauté minced garlic and shallot until fragrant.
  3. Add chicken/shrimp and fish balls/cakes (if using), stir-fry until cooked through.
  4. Push ingredients to one side of the wok, pour beaten eggs onto the other side and scramble until just set. Mix with other ingredients.
  5. Add flat rice noodles, sweet soy sauce, light soy sauce, oyster sauce, and white pepper. Toss well to combine and coat the noodles evenly.
  6. Add choi sum/bok choy and red chilies (if using). Continue to stir-fry for 2-3 minutes until vegetables are tender-crisp.
  7. Add bean sprouts and stir-fry for another minute until just wilted.
  8. Taste and adjust seasoning if needed.
  9. Serve hot, garnished with fried shallots.
