Stir-fried Bean Sprouts with Tofu

Stir-fried Bean Sprouts with Tofu
Ingredients
- 200g firm tofu, cut into small cubes
- 250g bean sprouts, washed and drained
- 3 cloves garlic, minced
- 4 shallots, thinly sliced
- 2 red chilies, diagonally sliced (adjust to taste)
- 1 green chili, diagonally sliced (optional)
- 1 tablespoon soy sauce
- 1 teaspoon oyster sauce (optional)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon sugar, or to taste
- 50ml water
- 2 tablespoons cooking oil
Instructions
- Heat cooking oil in a wok or large frying pan over medium-high heat.
- Add minced garlic, sliced shallots, and sliced chilies. Sauté until fragrant, about 1-2 minutes.
- Add the tofu cubes and stir-fry until lightly golden brown, about 3-5 minutes.
- Add the bean sprouts to the wok. Stir-fry quickly for about 1 minute until they start to wilt slightly but are still crisp.
- Pour in the soy sauce, oyster sauce (if using), salt, sugar, and water. Mix well to combine all ingredients.
- Continue to stir-fry for another 1-2 minutes until the bean sprouts are cooked to your desired tenderness and the sauce has thickened slightly.
- Remove from heat and serve immediately with steamed rice.
