Stir-fried Bean Sprouts with Tofu

Stir-fried Bean Sprouts with Tofu

Ingredients

  • 200g firm tofu, cut into small cubes
  • 250g bean sprouts, washed and drained
  • 3 cloves garlic, minced
  • 4 shallots, thinly sliced
  • 2 red chilies, diagonally sliced (adjust to taste)
  • 1 green chili, diagonally sliced (optional)
  • 1 tablespoon soy sauce
  • 1 teaspoon oyster sauce (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon sugar, or to taste
  • 50ml water
  • 2 tablespoons cooking oil

Instructions

  1. Heat cooking oil in a wok or large frying pan over medium-high heat.
  2. Add minced garlic, sliced shallots, and sliced chilies. Sauté until fragrant, about 1-2 minutes.
  3. Add the tofu cubes and stir-fry until lightly golden brown, about 3-5 minutes.
  4. Add the bean sprouts to the wok. Stir-fry quickly for about 1 minute until they start to wilt slightly but are still crisp.
  5. Pour in the soy sauce, oyster sauce (if using), salt, sugar, and water. Mix well to combine all ingredients.
  6. Continue to stir-fry for another 1-2 minutes until the bean sprouts are cooked to your desired tenderness and the sauce has thickened slightly.
  7. Remove from heat and serve immediately with steamed rice.
